cauliflower crust pizza:
1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp. dried oregano
1/2 tsp. crushed garlic
1/2 tsp. garlic salt
olive oil (optional)
pizza sauce, shredded cheese and toppings
//take one large head of cauliflower and chop the florets into chunks. put in your food processor and pulse until it looks like rice. i was lazy and didn't want to dirty up my food processor so i just chopped mine up into itty bitty pieces. (you could also use a cheese grater but i found chopping it to be just as easy.) microwave the cauliflower for about eight minutes (do not add water). one large cauliflower made enough rice for me to make three crusts.
//preheat oven to 450f.
//spray a cookie sheet with non-stick spray, or use a silicone baking mat.
//stir one cup riced cauliflower, one cup shredded mozzarella, and one egg. add spices and stir.
//form about a nine inch "crust" with your hands on the baking mat. brush with olive oil if you want.
//bake for 15 minutes.
//remove and add sauce, more cheese and toppings. turn broiler on high heat and place pizza under just until cheese melts.
*i'm not eating any dairy so for my pizza,
i used dairy-free cheese and it tasted just as good.
then i added bell peppers and zucchini.
landon and justin had regular cheese, with pepperoni and olives.
