on my grandma's 90th birthday a couple of years ago, we had a party and my aunt made soup. and this soup, let me tell you, was amazing. so amazing that we kept going back for seconds, except, it's not really seconds when it's the third or fourth time. anyway, i asked for the recipe and within a week, i was making it. and boy, do we love it over here. so, since i make it at least once a month (if not twice during the winter!), i thought i'd share it here. just in case you were interested in ever making it yourself. which, you should.
brown 1lb. mild italian sweet sausage in 1Tb of oil. (if in casing, slice into 1/4 inch rings.)
add and cook five minutes more: 1 cup sliced onion, 1 cup sliced carrot
add and heat to boiling, then cover and simmer one hour: 3 beef boullion cubes dissolved in 1&1/2 cups hot water, 2 small zucchini sliced (or 1 16oz can sliced zucchini), 2 cups canned chopped tomatoes, 2 cups finely shredded cabbage, 1 tsp. crushed basil leaves, 1/4 tsp. oregano, 1/4 tsp. garlic powder.
add and cook 20 minutes more: 2 cups cooked northern great beans (or 1 16oz can, undrained), 1Tb sugar, 1tsp. salt, 1/4 tsp. black pepper.
garnish with chopped parsley.
(yield: 3 quarts)
